Peanut pepper sauce or Okwa Ose is a palatable dish which is served with kolanut and garden egg. The name Okwa is derived from mortar and pestle which is used for grinding foodstuffs like pepper, crayfish, or to pound fufu, yam etc. Ose on the other hand represent pepper used for preparing the sauce.
Okwa Ose can be made from a variety of things such as groundnut (peanut) or peanut butter, pepper (fresh or dry), crayfish, palm oil, salt and native spices or sauce cubes (maggi, knorr) etc.
The mortar and pestle is used to pulverise crayfish, pepper and spices into fine particles. The ingredients are then thoroughly mixed with palm oil, to form a good looking, salivating and sweet smelling sauce. Eating the sauce is quite simple, you simply deep your garden egg or kolanut in the sauce to get your desired quantity and eat it.
Okwa Ose can be preserved for a short period by pouring the content into a jar and by sealing it securely to avoid the food being contaminated. Alternatively, you can pour the content into an air tight container and keep it refrigerated for as long as want.
