Akpu Ebere ebe

Akpu ebere ebe (popularly known as Abacha in Yoruba language) is a delicious snack prepared and served in Amaigbo. It is a superb snack which takes great effort and thrill to prepare. Akpu ebere ebe can be eaten on its own or in combination with other snacks like coconut, palm kernel and groundnut.

Akpu ebere ebe is made from cassava tuber. After harvesting cassava tubers, they are washed and cooked for a considerable length of time. The tubers are drained and the skin peeled off to reveal the white cassava. These are then sliced into fine thin layers, washed and soaked overnight so as to thoroughly remove the starch from the cassava. The sliced cassava is again thoroughly washed the following day before it is served. It is interesting to note that Akpu ebere ebe can also be served as African Salad (Akpu agworoagwo in Igbo language).

Preparation of Akpu Agworoagwo

The preparation of African Salad takes great efforts and exquisite cooking acumen. The ingredients needed to prepare African Salad vary according to ones taste. It can include ingredients such as ugba, cray fish, salt, pepper, mkpuruofe (anara), stockfish, stock cubes and palm oil.

The crayfish and pepper are pulverised with Okwa and Odo (mortar and pestle). These are then mixed thoroughly with the sliced cassava and palm oil and sliced mkpuruofe or ugba depending on ones choice. The food is then cooked or warmed for a while before it is served.
